Happy Christmahanukwanzica!

To all of you,

I hope your holiday is bright, cheery, and warm, and that you receive all you wanted this holiday season.

For the first time in the past five years, I am happy on this Christmas Eve/Day. Happy because I can give. Happy because Umi is happy and doing well. And because I am in a much better place than I have been. The pain is minimal now, thanks to my wonderful doctor, Dr. Katy Firisin. She did in two months what others were not able to do in several more months. I can stand for two hours without feeling pain or having it come back at me later. I can function normally, and to me, that is one of the greatest gifts I could ever hope for. So thank you, Dr. Firisin, for your amazing skills.

I can only hope that all of you beautiful, wonderful people are as blessed as I am this Christmas. Merry Christmas, from Umi and me.

The Longest Day of My Life

Was the last two hours of work before I would begin my two-week winter vacation writing extravaganza!

I know, you’re jealous that I have that much paid time off, but at least you work through the summers and aren’t losing about $5K per year (unless you’re a teacher). Why do you think I’ve been pushing the books/publishing company so much lately? I need that income, folks. Besides, it’s kind of nice when I get to pay my authors. They tend to like that as well, so go buy their books!

As a gentle reminder (and if I have to shove it down your throat, I will), I will NOT be editing ANYTHING between Dec. 20th 4:00 pm MST and Jan. 6th 4:00 pm MST. I will be utilizing this rare moment to work on one of three books (and maybe all three bc that’s how it works sometimes). Yes, one of them will be Assassin. One other will possibly be Gemini (mostly for edits). And the third may be either Tir na nOg or a yet-to-be-titled contemporary romance novella. What this all equates to is I will not be online much or available for much of anything except a coffee meeting here and there, and of course, holiday celebrations. I’m hiding in my cave for the next two weeks.

Drunken Irish Birthday Cake

Oh, that’s right. It is time once again for Jinxie’s Kitchen! Today, we have a recipe from my friend Deni, who has given us a couple of recipes before. Check out this shit.

Drunken Irish Cake

Drunken Irish Birthday Cake

Ingredients:

  • 1 Devil’s Food Cake Mix
  • 1 small package chocolate fudge pudding
  • 1 cup Extra Stout Guinness
  • ¼ cup oil
  • 4 eggs
  • 1 cup sour cream
  • 2 teaspoons vanilla

Preheat oven to 350*.   Mix ingredients, put into 9” round greased and floured cake pans.  Bake for 29-34 minutes.

Cool in pan for 10-15 minutes.

Remove cake from pan and cool on racks until room temperature.

Cut each layer into two layers.

  • Cherry puree or ganache
  • Whipped cream
  • Cake
  • Cherry puree
  • Cake
  • Whipped cream
  • Cherry puree
  • Cake
  • Cherry puree
  • Cake

Cherry Puree

  • 1 can cherry pie filling
  • ½ teaspoon almond extract or 1 tsp brandy or amaretto

Puree in food processor.

Whipped Cream

  • 2 cup whipping cream
  • 1 teaspoon almond extract
  • ½ cup powdered sugar

Whip until stiff peaks.

  • 1 Devil’s Food Cake Mix
  • 1 small package chocolate fudge pudding
  • 1 cup Extra Stout Guinness
  • ¼ cup oil
  • 4 eggs
  • 1 cup sour cream
  • 2 teaspoons vanilla

Preheat oven to 350*.   Mix ingredients, put into 9” round greased and floured cake pans.  Bake for 29-34 minutes.

Cherry Puree

  • 2 cans cherry pie filling
  • ½  teaspoon almond extract or 1 tsp Amaretto or brandy

Puree in food processor.

Set aside ¼ of cherry puree for ganache.

  • ¼ cup cherry puree
  • 1/2 bag milk chocolate chips

Slowly melt the chocolate chips into the cherry puree on stove until smooth.

Serve with freshly Whipped Cream.

  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla or ½ tsp almond extract
