Cornish Game Hens
1 hen per person
Olive oil
10 Potatoes (your preference but she uses red and the amount depends on their size)
1 small bag of baby carrots
1 to 1 1/2 Onions (yellow) – sliced
Season to taste
Fresh ground pepper
Fresh ground sea salt
Garlic powder
Onion salt
Butter or margarine
Add olive oil to skillet. Cut potatoes in halves or quarters, if using red. Slice onions. Add potatoes, onions and carrots to skillet until a bit crisp. Next add hens and seasonings.
Cook all together on high in large electric skillet until done. Potatoes, carrots, and onions will all be done cooking first so they will need to be removed from the skillet while hens finish cooking. Be sure to add butter/margarine during the last 15 minutes of potatoes cooking.
